Almond flour chocolate chip cookies

Groucho* and I picked up some basil from the supermarket so I could try making pesto in my new shiny food processor. Groucho expressed an interest in a box of rainbow chocolate candy cookie mix. I read the ingredients and said, 'you know what Groucho, we can buy some M&M's® and make those ourselves'. Just without the corn syrup and partially hydrogenated soybean oil. They don't seem to sell these in the supermarket--wierd?


So we look for a 'healthy' cookie recipe. We opt for this almond flour chocolate chip cookies recipe substituting rapadura for sugar and M&Ms for the chocolate chips (the healthy choice).


Okay, they don't look that hot I admit. But they were soft and chewy and quite satisfying. 

Groucho verdict: He ate them and was upset to discover his dad and I had polished off the last few. A resounding success.
